Easy Toss & Bake Vegan Granola If you follow me on Instagram (if you don’t, follow me!), you already know of my recent obsession of making homemade granola and having it every morning. I don’t know why I waited so long to make my own granola. It’s so incredibly simple to make and much cheaper than buying the pre-made kind in the store. Granola sold here in Malaysia is so expensive.

The best part of making your own granola is that you get to decided exactly what goes in! You can customize your own perfect mix with all your favorite nuts and dried fruit. Or, if you’re feeling lazy and don’t want to run out to the store, just use whatever you have in your pantry

When it comes to granola, here’s some basics to remember:

1. Always use rolled oats, not the quick cooking kind.

2. Include your favorite nuts and seeds.

3. Include your favorite dried fruit.

4. Try to include super seeds like hemp, flax, or chia seeds.

5. Omit oils, or at least try and limit them.

Easy Toss & Bake Vegan Granola

Here is my favorite go-to recipe for granola. It’s quick and easy and you can toss everything together in the pan, no bowls required! You can switch any of the ingredients out and substitute to your preference. I included oil in the recipe below, but I personally prefer to leave it out.

Easy Toss-And-Bake Granola

4  cups  old-fashioned rolled oats (not the quick cooking kind)
1  cup almonds, either sliced or roughly chopped
1/4 cup chopped walnuts
1/4 cup unsalted pepitas (hulled pumpkin seeds) or shelled sunflower seeds
2 tablespoons flaxseeds
1/2 cup shredded unsweetened coconut
1/2 tablespoon cinnamon
1/4 teaspoon salt
1/4 – 1/3 cup pure maple syrup
2 tablespoons oil of your choice (optional)
1 cup dried fruit (cherries, cranberries, raisins, or currants)

——-

Preheat oven to 350° F.

On a rimmed baking sheet, toss the oats, almonds, coconut, flaxseeds and pepitas with the maple syrup, cinnamon, and salt

Bake, tossing once, until golden and crisp, 25 to 30 minutes.

Add the dried fruit and toss to combine. Let cool.
